It finally snowed!  My hubby is out working in it as we speak.  I don't know how much we got yet but I know it's over an inch.  I don't know what has happened to us but we used to get snow each year and now it just seems that it is almost a rare event for it to happen to us.

 

Well-we had our red Valentine's Dinner and it was really nice.  I did it with two other couples so that I didn't do all of the work.  We tried to make all of our food red for Valentine's Day and we all had to wear red to the meal.  The dinner consisted of:

APPETIZERS: Red Pepper Dip and Cheddar and Tomato Fondue

MAIN COURSE: Red Potato Salad, Red Cabbage w/Red Apples, and Hong Kong Ribs with Red Barbeque Sauce

DESSERT:  a Big Red Cake and Raspberry Mousse with Amaretto

 

It was a really nice evening and meal.  Kind of nice to do something with friends in the middle of the week.

 

I DO HAVE SOME BIG NEWS!!!!  I do NOT have to go to trial and be a witness. (There was a trial date of February 27th and it was anticipated to be a week long trial)  WOO HOO!  Okay here is the short version of the story.  At the last job I worked at I caught my office manager embezzling from the company.  She was using company credit cards and checks to buy herself everything from items off of QVC, tanning, body piercings for her daughter, new furniture for her house, pay her utilities and cable, lawn tractors, groceries, basically you name it and she was probably buying it.  Anyway-she was using my job as the purchasing agent to cover her tracks.  And to top everything off not only was she buying herself all kinds of stuff with company funds but she was not paying any of the company vendors and not paying the company taxes!!!!!!  For the longest time nobody could figure out what was going on and the company started going down the tubes and we had to start laying people off left and right.    Well-anyway I finally figured out what she was doing and I told the owner of the company and we immediately called the police and started an investigation and I had to work around her for two weeks while we had an undercover cop coming in and investigating records.  That was not fun!  So we finally had her arrested and that was 3 years ago and the trial has been being put off and put off  and now the trial was supposed to be for Feb. 27th but she finally decided to plead guilty last Monday.  And now there will be no trial.  She will get a lesser charge but she will still be a convicted felon!!!  I think originally the prosecutor was going after 11 felony counts but now she settled for 4.  The article was in our local paper here is a link to it if you are interested in reading it:

 

 

I guess that the sentencing will be on March 12.  I am just so relieved that I don't have to go through all of that stress of a trial and having to deal with the most stressful time of the year at work of TAX season on top of it.  I know that she will probably not get the type of sentence that she would have if she would have gone to trial but I am at least happy that she will now be a convicted felon for the rest of her life and she hopefully will never ever be able to work in a position like that again.  (Oh and by the way I wanted to add that she is now a preacher and has her own t.v. show on our local access channel here.-Another funny comment to add is that her defense was that the owner of the company gave her permission to do what she did. -She is a piece of work.)

 

So that is my news and I am one happy woman that I do NOT have to deal with that stress right now.  Of course there will be the civil trial but I know that it will be nothing like the criminal trial would have been.  So just to let everyone know with the snow and no trial this month I will have a permanent smile glued to my face all day.

Well-I really have not been posting too much lately because I have had nothing interesting to post about.  But I had this discussion with a friend of mine at lunch today and now I don't know what to think.  I would like to know what everyone else thinks as well.

 

I had read an article on Yahoo about archaeologists finding a pair of skeletons that had been buried in the hugging position.  And that archaeologists estimated that they were about 5,000-7,000 years old.  And my friend said that it would be impossible for them to be that old because the Earth is only 6,000 years old.   

 

I know that according to Genesis the Earth was created in 6 days.  Is that supposed to be taken literally six days of Earth time?  Or is it 6 days of God's time?  I have always felt like God's time was so much different than ours.  How can anyone know 100 percent for sure unless someone has died, gone to Heaven, lived a day in Heaven and then returned to life here on Earth to say that yes indeed God's day is exactly like one of our 24 hour days right here on Earth.  My friend says that according to the Bible that God's timing is exactly like ours.  My friend has yet to show me the proof where it says that in the Bible.  ( I know that I am not showing much faith here am I?) 

 

I know that this shouldn't be that big of a deal to me but it is actually kind of driving me crazy because it is contrary to everything I have always believed.  I guess I have always just believed that God's timing is a lot longer than ours.

 

I found the following two Bible verses that I feel have to do with God's timing.

Psalm 90:4 (New International Version)  
 4 For a thousand years in your sight
       are like a day that has just gone by,
       or like a watch in the night.

2 Peter 3:8 (New International Version) 8But do not forget this one thing, dear friends: With the Lord a day is like a thousand years, and a thousand years are like a day.

 

 

Okay-I am beginning to feel Italian.  Which is pretty weird considering my last name is EXTREMELY Irish!  But it just seems like all of the last several dinners I have made either have red wine in them or they all have had tons of fresh garlic.  I am starting to go through fresh garlic like crazy!  I am beginning to buy fresh garlic from the store on a weekly basis.  The bad part about it is that whenever I come to work the next day I can still smell garlic on my hands from the night before.  Which is NOT an attractive smell!

 

And my meals have been so big lately that I have had to freeze some of my leftovers!  Which NEVER happens in a house with 4 kids and 4 of them being teenagers.

 

On Valentine's Day I have planned a red themed meal.  I thought about several other themes but this theme was fun.  I am cooking this meal with two other couples.  We are fixing-tomato soup with basil and cream cheese, ribs (with a red barbeque sauce), red potatos with garlic and rosemary, red cabbage, a cake made with red pop
